I know this doesn't qualify as a Southern recipe since my wife got it from her grandmother and both are Yankees but it's good enough to be a Southern recipe. In fact, I think the original might have been stolen during the War of Northern Aggression. ;D
Peanut butter pie!!
ready-bake pie shell powdered sugar vanilla (or flavor of choice) pudding peanut butter (well, duh) cool whip
mix peanut butter and powdered sugar until crumbly
sprinkle liberally over bottom of pie shell
pour in pudding and top with cool whip
sprinkle more pb/sugar mix over top and chill
The recipe calls for vanilla pudding but my wife prefers it with butterscotch and I prefer it with chocolate so there is room for experimentation. You can even use sugar free pudding and cool whip and mix your peanut butter with splenda to make a wonderful treat that diabetics can enjoy.
