Take a one and a half to two inch thick Ribeye (should be about two pounds worth. spritz with soy sauce and then just before hitting the grill dust each side with Lawry's Seasoning salt (use the cayenne flavor if you like 'em spicy). Run your BGE up to 700 degrees plus. yank the egg open and toss the steak in and get the egg shut as quickly as possible in a minute and a half to three minutes open 'er up and flip the steak and quick shut the grill to sear the other side for an equal amount of time. the time will be according to the degree of doneness you want. close both the upper and lower dampers and flip your steak and shut the grill up and let sit for three to five minutes. Once again longer times result in doner steaks.

Texas Omlette
1 C shredded tender brisket 3/4 C shredded jack 7 large eggs 1 whole seeded jalapeno 1 Tsp garlic powder 1 tsp salt a pinch of cumin
get out you food processor, and mince up the jalapeno, then add in the eggs, give them whiz til they are frothy, now add in your seasonings and whiz once more - get a oven safe skillet nice and hot, add in to it 2 Tsp of olive oil, don't sweat the amount the stuffs good for you, now dump your eggs in the pan, let the eggs just barely set, now pull off the heat, sprinkle the cheese & brisket over the egg now pop it into a 350 degree oven for approx 25 minutes.
Serve with some sliced bell pepper, & onions, salsa and sour cream (in texas we serve with creme fresh, but I haven't found that here yet) and some fresh tortillas.
same resipe above, but omit the brisket, cumin and jalapeno, and add in some ham, thyme & drained frozen spinach and it's very good too!
