I don't think this is technically a Southern recipe since I got it from my wife's grandmother who lived in Northern Indiana but they were country folks so I guess it'll translate pretty well. You need: Peanut butter (creamy or chunky is your preference) Powdered sugar (or Splenda if you're going sugar free) Ready bake pie shells Pudding (recipe calls for vanilla but we've found that butterscotch is good and chocolate is positively magical IMO Reeses pie anyone?) Cool Whip Bake your pie shells and let cool. Mix peanut butter and powdered sugar till it's crumbly. Sprinkle the mixture liberally over the bottom of the pie shell. Fill with pudding. Top with Cool Whip. Sprinkle more peanut butter mixture on top. Chill for a couple of hours and enjoy.
